Pinoy Delicacy: Kiping
April 23, 2011This is what we call kiping. It's main and only ingredient is cassava. How it is done? Well the cassava was grind and then rolled flat on a banana leaf cut into rectangular size. Im sorry I haven't posted some picture on the procedure, I'll shall add it here when our neighbor will cook again kiping. ;)
Now for the sauce on top of it is what we refer locally as "latik". It's actually a coconut milk and sugar mixed together. Cooking latik is not easy coz it needs continuous stirring so that it will not dry out and harden.

It had been years that I haven't eaten Kiping. Could hardly see these lately around CDO. :( I want to eat one soon.
