Pinoy Delicacy: Biko

Filipino Food Biko
Filipino Food Biko

Good Friday. Rather than the usual binignit we prepared biko (rice cake topped with caramel topping or latik). I bought for the ingredients and then my neighbor cook for it and then we share it after. My mom got lazy cooking biko even if she does know how to cook it because she was thinking that only 3 of us going to eat it and added to that mom and I cant eat to much of food which was cooked with coconut milk in it (or even oily foods) because if we do our heads would be aching and feel dizzy the whole time. In short kabuhion me... :D

Holy Week 2011

My Lenten Season vacation which started last Holy Thursday was spent at home doing movie marathon. Even my son, Justine, was doing some vacation from roaming around the neighborhood since he just stayed at home and was watching his DVD's from morning til night. Though he sometimes play with his toys in between and then back too his marathon.
Cagayan de Oro has a hot climate during the day and then gloomy most of the time on the afternoon from Holy Thursday until Black Saturday. And just last Holy Thursday the water levels of the river in Our Lady of Guadalupe Shrine in Igbalalay Hills, Cagayan de Oro City rises quickly and that there were 8 people who were washed away.
The eight pilgrims from Barangay Bugo were washed by strong currents as they negotiated the third of nine river crossings en route to the Birhen sa Guadalupe Shrine at Igbalalay Hills in Barangay Balubal, on their way down at around 7 o’clock Thursday evening. Responding rescuers plucked them out of the river an hour later, as they were clinging on to rocks and tree roots at the riverbank. Three were rushed to the hospital with one of them needing confinement due to the severity of her injuries.

Share ko lang to coz I like the view of the city last Good Friday hindi nga lang nabigyan ng justice sa digital camera ko... hehehe
Me and Justine watching the view of the city....

Justine while playing, nagbreak time sa dvd marathon niya... :

Pinoy Delicacy: Kiping

This is what we call kiping. It's main and only ingredient is cassava. How it is done? Well the cassava was grind and then rolled flat on a banana leaf cut into rectangular size. Im sorry I haven't posted some picture on the procedure, I'll shall add it here when our neighbor will cook again kiping. ;)

Now for the sauce on top of it is what we refer locally as "latik". It's actually a coconut milk and sugar mixed together. Cooking latik is not easy coz it needs continuous stirring so that it will not dry out and harden.

Bonding with Friends At Limketkai

It was a blast day yesterday after I went Missy Bon Bon's Gelatorama, I had the chance to hangout with Janlac and Cherry. If I haven't mention it yet in this blog, both Cherry and Janlac have been my co-worker last year.
It was never a planned actually, I just texted Janlac if she's in Limketkai Mall and when she replied yes I then went over to her most favorite place in the mall --Worlds of Fun. Indeed she was there busy playing along with Cherry and also on Janlac's hand was a bag of stuffed toys and other prizes she gained from the WOF tickets. Which reminds me to thank Janlac for the stuffed toy she gave last month... Well, actually it was more of a "toynap" coz I didn't gave it back to her the moment I played with it. :D
Janlac loves collecting stuffed toys from Worlds of Fun that is why she always budget money and time visiting the place almost every weekend. Yeah a different kind of addiction which is beneficial coz playing is one of the best escape after a long week of work stress.

After a few games more at Worlds of Fun we then ate at Greenwich. And then went to CD-R King coz Cherry bought a mouse and lastly to Missy Bon Bon wherein our lucky table won an additional 1 cup of gelato.
